Cook Your Protein
Heat a skillet over medium heat and cook your turkey sausage patties according to package directions until they're browned on both sides and cooked through completely. Set them aside on a plate and keep them warm.
Prepare the Eggs
In the same skillet, add a small pat of butter. Crack your eggs directly into the pan or scramble them first if you prefer—both methods work beautifully. For fried eggs, cook until the whites are set but the yolks remain slightly runny. For scrambled, stir gently until just set and still creamy.
Toast Your Bread
While the eggs cook, split your English muffins and toast them until golden brown and crispy on the edges. You can use a toaster or place them cut-side down in a separate skillet with butter for extra richness.
Build Your Sandwich
Place a slice of cheese on the bottom half of each toasted English muffin. The residual heat will start melting it immediately. Layer on your cooked sausage patty, then your egg, and add a handful of fresh spinach. Season with salt and pepper to taste.
Finish and Serve
Top with the other half of your English muffin and press down gently. The warmth from the fillings will wilt the spinach slightly and meld everything together into one glorious handheld breakfast.
